Deze buurt is <em>\u2018the place to go\u2019<\/em> voor de wereldse keuken in New York. Hier eet je tussen de New Yorkers en locals uit de buurt.<\/p>\n<h3>De Coi Cuon (summer roll)<\/h3>\n<p>Loempia\u2019s zijn by far h\u00e9t nationale gerecht van Vietnam. De \u2018Coi Cuon\u2019 op de kaart bij Madame Vo wordt traditioneel gemaakt met garnalen, vermicelli en munt. Het is een zachte, ongebakken \u2018summer roll\u2019. De ingredienten zijn rauw en dip je in een kommetje met vissaus.<\/p>\n<p><strong>Ingredienten:<\/strong><br \/>\n&#8211; Scampi\u2019s (gestoomd of gebakken)<br \/>\n&#8211; Dunne rijstnoedels (Go-Tan Mihoen Rice Noodles)<br \/>\n&#8211; Groene sla<br \/>\n&#8211; Munt<br \/>\n&#8211; Rijstvellen<br \/>\n&#8211; Vissaus<br \/>\n&#8211; Peper en zout<br \/>\n&#8211; 1 limoen<br \/>\n&#8211; 1 teentje knoflook<br \/>\n&#8211; 1 rode peper<br \/>\n&#8211; suiker<br \/>\n&#8211; rijstazijn<\/p>\n<p><strong>Bereiden<\/strong><br \/>\nLaat de rijstnoedels 4 minuten wellen in warm water.<br \/>\nDompel een rijstvel ongeveer 45 seconden in een grote kom water. Zorg ervoor dat alle kanten goed nat worden. Haal het rijstvel uit het water en dep het vel droog met een doek of keukenpapier. Het is nu zacht en buigzaam.<\/p>\n<p>Leg het rijstvel op een schone, droge ondergrond. De beste \u2018summer roll\u2019 maak je door te beginnen met vullen in het midden van de onderste helft. Vul de loempia met twee scampi\u2019s, opgerolde groene sla, munt, en de rijstnoedels. Werk het af met een beetje zout en peper. Houd je van pikant? Smeer dan lichtjes wat sambal over de vulling.<\/p>\n<p>Plooit de onderkant van het vel over de ingredienten en begin zachtjes de loempia te rollen. Vouw beide zijden naar binnen als je verder rolt. Rol voorzichtig, maar stevig.<\/p>\n<p><em><strong>Suggestie van de chef:<\/strong><\/em> Voeg fijne reepjes mango toe aan je loempia voor een zoete toets.<\/p>\n<h3>N\u01b0\u1edbc m\u1eafm saus<\/h3>\n<p>Neem een kommetje en pers de limoen. Giet er vier theelepels vissaus en twee theelepels rijstazijn bij. Schep er een eetlepel suiker bij en roer het goed door totdat de suiker opgelost is. Snijd de rode peper doormidden en verwijder de zaadjes. Houd wat zaadjes aan de kant. Snijd de rode peper in hele fijne sliertjes en voeg het met enkele zaadjes toe aan de saus. Snijd vervolgens een stukje wortel in zeer fijne slierten en een teentje knoflook fijn.
